Ingredients

  • 1 cup
  • 1 cup mango pulp (ripe Alphonso is best; tinned pulp works year-round)
  • 2–4 tbsp sugar, to taste
  • a little milk or water, to thin
  • a pinch
  • ice (optional)

Steps

  1. 1.Blend the yogurt, mango pulp, sugar, a little milk and the ice until smooth.
  2. 2.Adjust sweetness and thickness.
  3. 3.Chill; dust with cardamom.

Variations

Salty lassi (namkeen): no mango, salt + roasted cumin.
Sweet plain lassi / rose lassi.

Lassi is Punjab's yogurt drink, traditionally churned and frothed in tall steel tumblers. The mango version is the restaurant favourite abroad. Out of mango season, tinned Alphonso pulp makes the best one — that variety is prized for being sweet and almost fibre-free.
