Ingredients

  • 1 cup , whisked smooth
  • ½ cucumber, grated (squeeze out water)
  • ½ tsp roasted powder — see

Steps

  1. 1.Whisk the yogurt smooth.
  2. 2.Stir in cucumber, , salt, and chili.
  3. 3.Chill; garnish with mint or coriander.

Variations

Boondi raita: with crisp little chickpea-flour drops.
Onion-tomato raita / mint raita.

Yogurt's job is to cool. It tames chilli heat better than water because its fat and milk protein grab the capsaicin that water just spreads around. Roasted cumin is the flavour that says "raita." Every region has its own add-ins.
