Ingredients

  • 2 tbsp oil
  • 1 tbsp butter
  • 2 large , finely chopped
  • 1 tsp
  • 1.5 tbsp
  • 1–2 , chopped
  • 2 large tomatoes, finely chopped
  • salt

  • 1 tsp
  • 1 tsp or pav bhaji masala

Variations

Anda bhurji: the same method with eggs — India's spiced scrambled eggs.
Pav bhaji masala instead of garam masala pushes it toward Mumbai street flavour.

Bhurji means "scrambled," and that's all it is — fast, cheap, made on every cart and home stove for breakfast or a late snack. The egg version came first; paneer bhurji is the vegetarian answer. The besan is the quiet trick: it soaks up moisture so the scramble holds together instead of going watery.
